Ingredients
  • 4 cups Besan (sifted)
  • ½ tsp White or red chili powder (to taste)
  • 1 tsp Sanchoro
  • 1½ tsp Salt
  • 1 cup Oil
  • Oil (for frying)
Instructions
  1. Knead vigorously with wet hands, to prevent sticking.
  2. In a blender add oil, salt and sanchoro. Blend until frothy.
  3. In a bowl, combine chili powder with besan.
  4. Pour the oil mixture and enough cold water to make a soft dough.
  5. Spray oil in the sev sancha machine, with a slotted disc installed.
  6. Fill the dough and close the lid.
  7. Heat the oil on medium high heat, hold the machine over the hot oil and make gathiya.
  8. Fry until golden.
  9. Carefully turn over and continue frying.
  10. Remove and drain on a paper towel.
  11. Continue until all the dough is finished.
