Papdi Gathiya
Ingredients
- 4 cups Besan (sifted)
- ½ tsp White or red chili powder (to taste)
- 1 tsp Sanchoro
- 1½ tsp Salt
- 1 cup Oil
- Oil (for frying)
Instructions
- Knead vigorously with wet hands, to prevent sticking.
- In a blender add oil, salt and sanchoro. Blend until frothy.
- In a bowl, combine chili powder with besan.
- Pour the oil mixture and enough cold water to make a soft dough.
- Spray oil in the sev sancha machine, with a slotted disc installed.
- Fill the dough and close the lid.
- Heat the oil on medium high heat, hold the machine over the hot oil and make gathiya.
- Fry until golden.
- Carefully turn over and continue frying.
- Remove and drain on a paper towel.
- Continue until all the dough is finished.
