Banana Puri

Ingredients
- 2 cups All purpose flour
- 2 tsps Oil
- 1 tsp Salt
- ¾ tsp Ground cumin
- ⅛ tsp Turmeric
- 1 tsp Cumin seeds (or caraway seeds)
- Oil (for brushing)
- Oil (for frying)
Instructions
- Mix all ingredients and make a firm dough using chilled water.
- Cover and let rest for 20 minutes.
- Make a mixture of ¼ cup each: cornstarch and all purpose flour and set aside.
- Divide dough into six balls.
- Take one ball, roll a large 10 to 12 inch diameter thin circle.
- Brush oil all over and sift some of the flour mixture all over.
- Roll another circle of the same size and place on top of the first and repeat oil and flour.
- Lift one side of the circle and make a tight cylindrical roll and repeat with the remaining balls.
- Cut quarter inch thick slices from roll.
- Take one slice, place it on a flat surface. Using a rolling pin, roll to make a long oval shape about three inches long.
- Layers should be visible.
- Repeat for remaining slices and fry on low to medium heat.
- Use two forks to help separate layers lightly and to help cook the inside.

- Make with salt only, or salt and pepper.
