Ingredients
  • 2 cups All purpose flour
  • 2 tsps Oil
  • 1 tsp Salt
  • ¾ tsp Ground cumin
  • ⅛ tsp Turmeric
  • 1 tsp Cumin seeds (or caraway seeds)
  • Oil (for brushing)
  • Oil (for frying)
Instructions
  1. Mix all ingredients and make a firm dough using chilled water.
  2. Cover and let rest for 20 minutes.
  3. Make a mixture of ¼ cup each: cornstarch and all purpose flour and set aside.
  4. Divide dough into six balls.
  5. Take one ball, roll a large 10 to 12 inch diameter thin circle.
  6. Brush oil all over and sift some of the flour mixture all over.
  7. Roll another circle of the same size and place on top of the first and repeat oil and flour.
  8. Lift one side of the circle and make a tight cylindrical roll and repeat with the remaining balls.
  9. Cut quarter inch thick slices from roll.
  10. Take one slice, place it on a flat surface. Using a rolling pin, roll to make a long oval shape about three inches long.
  11. Layers should be visible.
  12. Repeat for remaining slices and fry on low to medium heat.
  13. Use two forks to help separate layers lightly and to help cook the inside.
