Red & Green Salad

Ingredients
- 1 cup Cucumber (peeled and cubed)
- 1 cup Tomatoes (cubed)
- ½ cup Red bell pepper (cubed)
- ½ cup Carrots (thinly sliced)
- ½ cup Green onions (thinly sliced - include whites)
- ½ cup Yellow bell pepper (cubed)
Instructions
- Combine the vegetables in a bowl.
Ingredients
- 2 tbsps Lemon juice
- 5 tbsps Roasted peanuts (crushed)
- ¼ cup Green coriander (finely chopped)
- 1 tsp Sesame seeds
- ½ tsp Garlic (crushed)
- Salt (to taste)
Instructions
- Mix the dressing ingredients, add to the vegetables and toss.
- Serve chilled.
