Ingredients
  • 1 cup Cucumber (peeled and cubed)
  • 1 cup Tomatoes (cubed)
  • ½ cup Red bell pepper (cubed)
  • ½ cup Carrots (thinly sliced)
  • ½ cup Green onions (thinly sliced - include whites)
  • ½ cup Yellow bell pepper (cubed)
Instructions
  1. Combine the vegetables in a bowl.
Ingredients
  • 2 tbsps Lemon juice
  • 5 tbsps Roasted peanuts (crushed)
  • ¼ cup Green coriander (finely chopped)
  • 1 tsp Sesame seeds
  • ½ tsp Garlic (crushed)
  • Salt (to taste)
Instructions
  1. Mix the dressing ingredients, add to the vegetables and toss.
  2. Serve chilled.
