Ingredients
  • ½ cup Red or mixed quinoa
  • ½ cup Red bell pepper (finely chopped)
  • ½ cup Green bell pepper (finely chopped)
  • ½ cup Carrots (finely chopped)
  • ½ cup Onion (finely chopped)
  • ½ cup Red cabbage (finely chopped)
  • ½ cup Sour apple (finely chopped)
  • 2 tbsps Green corainder (finely chopped)
  • ¼ cup Pomegranate seeds (also known as arils)
  • ¾ cup Garbanzo beans (boiled)
  • Walnut pieces (as needed)
  • ¼ tsp Salt (for boiling)
Instructions
  1. In a saucepan, boil 1 cup of water.
  2. Add ¼ tsp salt and quinoa.
  3. Cook on medium heat until the quinoa is soft.
  4. Strain and let cool.
  5. Combine the salad ingredients with the quinoa.
  6. NOTE: quinoa triples in quantity when boiled.

  • 2 tbsps Balsamic vinegar
  • 2 tbsps Olive oil
  • ½ tsp Salt
  • 1 tbsp Honey

  1. Whisk together the dressing ingredients and drizzle over the salad.
