Quinoa Salad
Ingredients
- ½ cup Red or mixed quinoa
- ½ cup Red bell pepper (finely chopped)
- ½ cup Green bell pepper (finely chopped)
- ½ cup Carrots (finely chopped)
- ½ cup Onion (finely chopped)
- ½ cup Red cabbage (finely chopped)
- ½ cup Sour apple (finely chopped)
- 2 tbsps Green corainder (finely chopped)
- ¼ cup Pomegranate seeds (also known as arils)
- ¾ cup Garbanzo beans (boiled)
- Walnut pieces (as needed)
- ¼ tsp Salt (for boiling)
Instructions
- In a saucepan, boil 1 cup of water.
- Add ¼ tsp salt and quinoa.
- Cook on medium heat until the quinoa is soft.
- Strain and let cool.
- Combine the salad ingredients with the quinoa.
- NOTE: quinoa triples in quantity when boiled.

- 2 tbsps Balsamic vinegar
- 2 tbsps Olive oil
- ½ tsp Salt
- 1 tbsp Honey
Instructions
- Whisk together the dressing ingredients and drizzle over the salad.
