Black Bean Salad
Ingredients
- 1 can Black beans (15oz - drained and rinsed)
- 1 cup Corn kernals (boiled)
- ½ cup Onion (sliced)
- 1 tbsp Pickled jalapeno (chopped)
- 1 small Avocado (chopped in chunks)
Instructions
- Combine all the ingredients in a bowl.
Ingredients
- 2 tbsps Olive Oil
- 1 tbsp Lime juice
- ½ tsp Salt (or to taste)
- ½ tsp Sugar
- 1 tsp Maple syrup (substitute for sugar)
- ⅓ cup Green coriander (finely chopped)
- ½ tsp Garlic (chopped)
Instructions
- Blend the dressing ingredients together and pour over the salad.
- Toss and chill before serving.
