Pasta Salad
Ingredients
- 2 cups Garden rotini pasta (colored)
- 1½ cup Cauliflower florets
- 1½ cup Broccoli florets
- 1½ cup Carrots (diced)
- ¾ cup Red bell pepper (diced)
- ¾ cup Green bell pepper (diced)
Instructions
- Cook pasta to package instructions.
- Steam vegetables for 2 minutes and cool immediately to retain crispness.
Ingredients
- ½ tsp Crushed garlic
- 1½ cup Zesty Italian dressing (or creamy)
- 1½ cup Zucchini (diced)
- 1 cup Muchrooms (chopped)
- 1 cup Black olives (sliced)
- 10 Cherry tomatoes (halved)
- ½ tsp Salt (or to taste)
Instructions
- In a large salad bowl, mix pasta and steamed vegetables.
- Add garlic and 1 cup of salad dressing,
- Cover and refrigerate for 1 hour.
- Just before serving, add zucchini, mushrooms, olives, tomatoes, salt and the remaining dressing, mix well.
