Ingredients
6 large
Flour tortillas
1 cup
Long grain rice
(wash and soak for 20 minutes)
1 can
Refried black or pinto beans
(15 oz)
¼ cup
Onion
(finely chopped)
1 Tbsp
Oil
1 tsp
Taco seasoning
2 cups
Lettuce
(shredded)
1 cup
Tomatoes
(finely chopped)
Sour cream
(as needed)
Guacamole
(as needed)
Pepper jack cheese
(as needed)
Taco sauce
(for serving)
Instructions

Heat 1½ cups of water in a saucepan.

Drain rice and add to the water along with ½ tsp taco seasoning.

Bring to a boil then reduce heat, cover and cook until done and all water is absorbed.

In a saucepan, heat oil on medium, add onions and sauté until transparent.

Add the beans, remaining taco seasoning, and 1 tbsp of water.

Mix, once heated, set aside.

Divide all the ingredients into 6.

In a frying pan, warm a tortilla on low heat.

Layer one part of the ingredients in the center, including guacamole, sour cream and cheese.

Fold 3 sides and carefully flip to seal. One side stays open.

Repeat with the remaining tortillas to make 6 burritos.

Serve with taco sauce.
