Ingredients
  • 4 cups Plain yogurt (full fat)
  • White sugar
  • Saffron (soaked in milk - optional)
  • Ground cardamom
  • Almonds (sliced)
  • Pistachois (sliced)
Instructions
  1. Place yogurt on a fine weave cheesecloth, bring corners together and tie a knot. Hang overnight with a dish underneath to allow the whey to drip.
  2. Next morning discard the whey and open the cheesecloth. A firm curd should be formed. Empty into a container.
  3. For 1 cup of curd, add ⅔ cup of sugar, mix thoroughly and let rest, allowing the sugar to dissolve (a couple of hours). The texture should now be smooth.
  4. Tie a cheesecloth very tightly on a dish, place sweet curd on it and using a spatula, strain curd through the cheesecloth.
  5. Shrikhand is ready. Saffron can be added in the Shrikhand.
  6. Refrigerate.
