Sabundana Kheer
Ingredients
- 2 cups Whole milk
- ½ cup Tapioca
- ¼ cup Sugar (to taste)
- ¼ tsp Ground cardamom (substitute - nutmeg)
- 1 tbsp Ghee
- 1 tbsp Almonds (chopped - optional)
- 1 tbsp Pistachios (raw - chopped -optional)
Instructions
- Wash tapioca and soak in 1 C water for 4 hours.
- Roast nuts in ghee, set aside. (optional).
- In a saucepan, heat milk on medium heat. When it starts to bubble, add tapioca (strained), stirring frequently. Cook for 10-15 minutes or until tapioca is transparent and soft.
- Add sugar and cardamom, keep stirring to thicken to desired consistency and to dissolve sugar.
- Remove from heat, incorporate the nuts.
- Serve hot or cold.
