Ingredients
  • ½ cup Ghee
  • 1 cup Fine semonlina (sooji)
  • 10 Golden raisins
  • 1 cup Milk
  • 1 cup Water
  • ¾ cup Sugar (to taste)
  • ¾ tsp Ground cardamom
  • 4 Almonds (sliced - garnish)
  • 4 Raw pistachios (sliced - garnish)
Instructions
  1. In a saucepan, melt ghee on low heat, add sooji and raisins.
  2. Stir continuously until color begins to change and aromatic.
  3. Carefully and gradually pour hot milk, stir. Cover and simmer on low heat, until the milk is absorbed (about 5 minutes).
  4. Add sugar and cardamom, mix well until the syrup is absorbed and ghee comes up.
  5. Garnish.
Variation
  1. Add ½ cup of pineapple purée when adding sugar, adjust sugar quantity to your taste.
