Mango Pulp (Rus)
Ingredients
- Mangos
- Salt
- Ground cumin
- Vanilla ice cream (optional)
Instructions
- Carefully roll mangoes on a hard surface to loosen the pulp, additionally press gently with your thumb, all over the mango.
- Place a fine mesh strainer on a container. Remove stem from the mango and squeeze the pulp and the pit out from the top into the strainer.
- Scrape any pulp left in the skin. With a ladle, scrape and discard the pit.
- Using the back of the ladle, rub the pulp through the strainer. Discard stringy residue.
- Whisk pulp with a hand blender to make smooth. Chill.
- When serving sprinkle salt and ground cumin, if desired.
- You can also whisk some vanilla ice cream in the pulp.
