Roti

Ingredients
- 1 cup Wheat flour
- 1 tsp Oil
- ½ tsp Salt (optional)
Instructions
- Combine salt in flour.
- Rub oil in flour, then using hot water, bind to make a soft dough.
- Knead until smooth and pliable.
- Coat dough with a little ghee or oil. Cover and let rest for 15 minutes.
- Divide dough into 8 equal size balls. Roll rotis, using all purpose flour for dusting, about 6-7 inch diameter circles. Dust off excess flour.
- Heat griddle on medium heat, place roti on griddle to cook.
- When bubbles appear, turn over and roast for a few seconds.
- Then turn roti over onto an open flame to puff it up.
- Remove from heat and spread butter or ghee on it. Can puff on a wire rack.
