Ragi Roti

Ingredients
- 1 cup Ragi flour
- 1 cup Water
- ⅛ tsp Salt (optional)
- ½ tsp Ghee
- Ghee (for coating)
Instructions
- In a saucepan bring water to a boil, add salt.
- Lower heat to lowest setting. Add flour, stir and let sit for 1 minute then turn off the heat.
- Stir until a dough is formed. Empty into a dish, knead well using a little water. Apply ghee and knead again.
- Cover and set aside for five minutes then make 8 equal size balls
- Take one ball, knead then coat in some ragi flour and roll into a thin circle, dust off excess flour.
- Heat a griddle on medium heat, place roti on griddle and cook until bubbles appear. Flip, it will begin to puff up.
- Flip and cook both sides then coat the top with ghee and serve hot.
