Ingredients
1 cup
Idli flour
(recipe under "South Indian")
4 tsps
Oil
1 tsp
Cumin seeds
1 tsp
Salt
ΒΌ tsp
Fenugreek seeds
1 tsp
Eno
(fruit salt)
Oil
(for greasing)
Instructions

Combine idli flour and oil, mix well, it should feel crumbly.

Incorporate the remaining ingredients, except Eno.

Make a thick batter, using hot water, stir vigorously to aerate.

Cover and let ferment in a warm place for at least 8 hours or overnight.

Prepare an idli pot, bring water to a boil, grease idli trays with oil.

Add Eno to the batter, stir and immediately pour two tbsp of batter in each compartment of the idli tray.

Steam for 14 minutes.

Remove from trays and serve with sambar and chutney.

Note: Eno is a raising agent, so do not let it sit in the batter. if making several batches, add Eno per batch.
