Ingredients
8 oz
Spaghetti
Cheese
(grated i.e. cheddar, monterey jack, mozzarella)
24 oz
Pasta sauce
1 cup
Vegetables
(finely chopped i.e. onions, bell peppers, zucchini, mushrooms, etc.)
¼ tsp
Ground cumin
(optional)
⅛ tsp
Ground cloves
(optional)
2 Tbsps
Green coriander
(finely chopped, optional)
1 cup
Refried beans
(optional)
Instructions

Preheat oven 375°F.

Boil spaghetti according to package directions, add ½ tsp salt and ¼ tsp oil to the water.

In a saucepan, heat sauce on medium heat.

Add vegetables, cumin, cloves, coriander and beans, mix.

Simmer for 5 minutes.

Combine spaghetti into the sauce and empty into a 9x11 inch greased glass baking dish.

Spread evenly. Sprinkle grated cheese and bake for 10 minutes or until the cheese is melted and lightly browned.

Alternatively, serve individual portions in a microwave safe plates.

Place spaghetti on the plate, sprinkle cheese on top and microwave on high for two minutes, cheese should be melted.

Serve with garlic bread.
