Ingredients
2 cups
Milk
1 Tbsp
Sugar
3 Tbsps
Rose syrup
2 Tbsps
Tukmaria (sweet basil seeds)
(soaked for ½ hour in cold water)
2 Tbsps
Falooda sev
(thin noodles made from tapioca starch)
2 scoops
Vanilla ice cream
Almonds
(sliced)
Pistachios
(unsalted/sliced)
Cashews
(raw/chopped)
Instructions

Bring the milk to a boil. Add sugar, stir and simmer for 5 minutes.

Remove from heat, cool completely then add 2 tablespoons of syrup and chill.

In a saucepan, boil some water, add sev and cook for 5 minutes. The sev should be cooked. Remove from heat, strain and cool under cold running water.

Swirl a little syrup around the inside of a tall glass, for decor. Place ½ of the soaked tukmaria then ½ the sev then pour the milk up to ⅔ full.

Put a scoop of ice cream on top, sprinkle nuts and drizzle some syrup.

Repeat for the second glass.

Note: choice of: diced fruit, berries, tutti fruity, dry fruit and nuts, saffron milk / ground pistachio (kesar/ pista), cubed jello, etc. can be used for variety.
