Pulav
Ingredients
- 1 tbsp Ghee
- 1 tsp Oil
- 1 inch Cinnamon stick
- 3 Cloves
- 2 Cardamom pods
- 1 tsp Whole cumin
- ½ cup Carrots (small cubes)
- ½ cup Green peas
- 1 cup Basmati rice
- 3 Cashews (raw)
- 1½ cup Water (hot)
- 1 tsp Salt
- ½ tsp Lemon juice
Instructions
- Wash and soak basmati rice for 30 minutes, drain.
- Heat ghee and oil in a saucepan, add cinnamon and cloves, stir and add cumin.
- When crackled, add carrots and peas, stir for one minute.
- Add rice and cashews, mix well to coat. Add hot water, salt and lemon juice.
- Stir and bring to a boil. Reduce heat to low, cover and cook for 20 minutes. The rice should be cooked and the water absorbed.
- Rice grains should be separate. Fluff with a fork.
