Ingredients
  • 1 tbsp Ghee
  • 1 tsp Oil
  • 1 inch Cinnamon stick
  • 3 Cloves
  • 2 Cardamom pods
  • 1 tsp Whole cumin
  • ½ cup Carrots (small cubes)
  • ½ cup Green peas
  • 1 cup Basmati rice
  • 3 Cashews (raw)
  • 1½ cup Water (hot)
  • 1 tsp Salt
  • ½ tsp Lemon juice
Instructions
  1. Wash and soak basmati rice for 30 minutes, drain.
  2. Heat ghee and oil in a saucepan, add cinnamon and cloves, stir and add cumin.
  3. When crackled, add carrots and peas, stir for one minute.
  4. Add rice and cashews, mix well to coat. Add hot water, salt and lemon juice.
  5. Stir and bring to a boil. Reduce heat to low, cover and cook for 20 minutes. The rice should be cooked and the water absorbed.
  6. Rice grains should be separate. Fluff with a fork.
