Ingredients
  • 2 tbsps Olive oil
  • ½ cup Onion (finely chopped)
  • 2 cups Cauliflower florets (small/washed)
  • 4 cups Vegetable stock
  • 2 cups Evaporated milk
  • ¼ tsp Ground nutmeg
  • 4 oz White cheddar cheese (grated)
  • Salt (to taste)
  • Pepper (to taste)
Instructions
  1. In a saucepan, heat oil, on medium heat, add onions, sauté for a couple of minutes.
  2. Add cauliflower and cook covered until slightly soft. Set aside 1 cup of cooked cauliflower.
  3. Add the stock, milk and nutmeg to the remaining cauliflower, simmer until cooked.
  4. Blend with a hand blender, incorporate the cheese, salt, pepper and cauliflower.
  5. Heat until the cauliflower is soft and the cheese is melted
  6. Serve in a bread bowl (optional).
