Cauliflower and White Cheddar Soup
Ingredients
- 2 tbsps Olive oil
- ½ cup Onion (finely chopped)
- 2 cups Cauliflower florets (small/washed)
- 4 cups Vegetable stock
- 2 cups Evaporated milk
- ¼ tsp Ground nutmeg
- 4 oz White cheddar cheese (grated)
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a saucepan, heat oil, on medium heat, add onions, sauté for a couple of minutes.
- Add cauliflower and cook covered until slightly soft. Set aside 1 cup of cooked cauliflower.
- Add the stock, milk and nutmeg to the remaining cauliflower, simmer until cooked.
- Blend with a hand blender, incorporate the cheese, salt, pepper and cauliflower.
- Heat until the cauliflower is soft and the cheese is melted
- Serve in a bread bowl (optional).
