Date and Nut Roll
Ingredients
- ¼ cup Walnuts (chopped)
- ¼ cup Almonds (raw/chopped)
- ¼ cup Cashews (raw/chopped)
- ¼ cup Pistachios (unsalted/chopped)
- 1½ cup Dates (pitted/chopped)
- 3 tbsps Raisins (chopped)
- 2 tbsps Poppy seeds (dry roast for 30 seconds)
- 1 tbsp Ghee
Instructions
- In a saucepan dry roast the nuts on medium heat for a couple of minutes, set aside.
- Heat ghee in the saucepan and cook the dates for about 10 minutes, stirring and pressing with a spoon to make it soft and pulpy.
- Reduce heat and add nuts and raisins, mix thoroughly, remove from heat and let cool slightly.
- Grease palms of your hands with ghee and roll the mixture on a flat surface into a log as thick as you wish.
- Move the log aside, sprinkle poppyseeds on a flat surface and roll the log on it to coat completely.
- Wrap in plastic wrap and refrigerate for 1 hour then cut half inch thick slices.
