Ingredients
  • 2 tbsps Oil
  • 1 cup Eggplant or mushrooms (finely chopped)
  • ¼ cup Onion (finely chopped)
  • 1 tsp Garlic (crushed)
  • 1 cup Spinach (finely chopped)
  • ¾ cup Kidney beans (boiled, mashed)
  • 2 cups Tomato sauce
  • 2 cups Vegetable stock
  • 2 tbsps Basil (dried)
  • 1 tbsp Italian seasoning
  • ⅛ tsp Ground cloves
  • Salt (to taste)
  • Pepper (to taste)
Instructions
  1. In a saucepan, heat oil on medium heat.
  2. Sauté eggplant for a couple of minutes.
  3. Add onions and garlic.
  4. Stir, then add spinach and sauté for two more minutes.
  5. Add beans, tomato sauce and vegetable stock.
  6. Mix thoroughly then combine seasonings and simmer for 5 minutes.
  7. Remove from heat.
  8. Blend lightly with a hand blender, keeping a coarse texture.

  1. This sauce can be used on pizza, pasta, etc
