Meatless Meat Sauce
Ingredients
- 2 tbsps Oil
- 1 cup Eggplant or mushrooms (finely chopped)
- ¼ cup Onion (finely chopped)
- 1 tsp Garlic (crushed)
- 1 cup Spinach (finely chopped)
- ¾ cup Kidney beans (boiled, mashed)
- 2 cups Tomato sauce
- 2 cups Vegetable stock
- 2 tbsps Basil (dried)
- 1 tbsp Italian seasoning
- ⅛ tsp Ground cloves
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a saucepan, heat oil on medium heat.
- Sauté eggplant for a couple of minutes.
- Add onions and garlic.
- Stir, then add spinach and sauté for two more minutes.
- Add beans, tomato sauce and vegetable stock.
- Mix thoroughly then combine seasonings and simmer for 5 minutes.
- Remove from heat.
- Blend lightly with a hand blender, keeping a coarse texture.
Note:
- This sauce can be used on pizza, pasta, etc
