Green Enchilada Sauce
Ingredients
- 1 lb Tomatillos (peeled, washed & halved)
- 1 Medium onion (peeled & quartered)
- 1 Serrano or jalapeño pepper (halved lengthwise)
- 4 cloves Garlic (unpeeled)
- 1 tbsp Olive oil
- 2 tsps Whole cumin
- ½ tsp Salt
- ½ tsp Ground black pepper
- 2 tsps Lime juice
- 1 cup Green coriander (chopped)
Instructions
- Preheat broiler on medium.
- Arrange tomatillos, onions, pepper and garlic on a baking tray.
- Drizzle oil and broil until slightly charred.
- Remove skin from garlic and pepper, place in a food processor.
- Add remaining ingredients and blend until smooth.
