Kand (Ratalu) Sheero
Ingredients
- 1 cup Mashed kand (purple yam)
- 2 tbsps water (hot)
- ¼ cup Ghee
- 1 tbsp Cashew halves
- 1 tbsp Golden raisins
- ⅓ cup Sugar (or to taste)
- ¼ tsp Ground cardamom
- 4 Almonds (sliced for garnish)
Instructions
- Peal, steam and mash kand.
- In a saucepan, melt ghee on low, sauté cashews and raisins for 30 seconds.
- Add kand, stir continuously until the ghee begins to separate and the kand is smooth.
- Add water, stir until absorbed.
- Add sugar and cardamom, stir until dissolved and thickened.
- Sprinkle sliced almonds, stir and remove from heat.
