Shrikhand
Ingredients
- 4 cups Plain yogurt (full fat)
- White sugar
- Saffron (soaked in milk - optional)
- Ground cardamom
- Almonds (sliced)
- Pistachois (sliced)
Instructions
- Place yogurt on a fine weave cheesecloth, bring corners together and tie a knot. Hang overnight with a dish underneath to allow the whey to drip.
- Next morning discard the whey and open the cheesecloth. A firm curd should be formed. Empty into a container.
- For 1 cup of curd, add ⅔ cup of sugar, mix thoroughly and let rest, allowing the sugar to dissolve (a couple of hours). The texture should now be smooth.
- Tie a cheesecloth very tightly on a dish, place sweet curd on it and using a spatula, strain curd through the cheesecloth.
- Shrikhand is ready. Saffron can be added in the Shrikhand.
- Refrigerate.
- To serve : place shrikhand in individual bowls, sprinkle cardamom, almonds and pistachios.

- Mix desired fruit in shrikhand before serving.
