Falooda

Ingredients
- 2 cups Milk
- 1 tbsp Sugar
- 3 tbsps Rose syrup
- 2 tbsps Tukmaria (sweet basil seeds) (soaked for ½ hour in cold water)
- 2 tbsps Falooda sev (thin noodles made from tapioca starch)
- 2 scoops Vanilla ice cream
- Almonds (sliced)
- Pistachios (unsalted/sliced)
- Cashews (raw/chopped)
Instructions
- Bring the milk to a boil. Add sugar, stir and simmer for 5 minutes.
- Remove from heat, cool completely then add 2 tablespoons of syrup and chill.
- In a saucepan, boil some water, add sev and cook for 5 minutes. The sev should be cooked. Remove from heat, strain and cool under cold running water.
- Swirl a little syrup around the inside of a tall glass, for decor. Place ½ of the soaked tukmaria then ½ the sev then pour the milk up to ⅔ full.
- Put a scoop of ice cream on top, sprinkle nuts and drizzle some syrup.
- Repeat for the second glass.
- Note: choice of: diced fruit, berries, tutti fruity, dry fruit and nuts, saffron milk / ground pistachio (kesar/ pista), cubed jello, etc. can be used for variety.
- Adjust ice cream flavor accordingly.
