Ingredients
  • 2 cups Milk
  • 1 tbsp Sugar
  • 3 tsps Rose syrup
  • 2 tbsps Tukamaria (sweet basil seeds) (soaked ½ hour in cold water)
  • 2 tbsps Falooda sev (thin noodles made from tapioca starch)
  • 2 scoops Vanilla ice cream
  • Almonds (sliced)
  • Pistachios (unsalted/sliced)
  • Cashews (raw/chopped)
Instructions
  1. Bring the milk to a boil. Add sugar, stir and simmer for 5 minutes.
  2. Remove from heat, cool completely then add 2 tablespoons of syrup and chill.
  3. In a saucepan, boil some water, add sev and cook for 5 minutes. The sev should be cooked. Remove from heat, strain and cool under cold running water.
  4. In a tall glass, pour 1 teaspoon of syrup. Place ½ of the soaked tukmaria then ½ the sev then pour the milk.
  5. Put a scoop of ice cream on top, sprinkle nuts and drizzle some syrup.
  6. Repeat for the second glass.
  7. Note: diced fruit, tutti fruity and cubed agar-agar jelly (jello) can be added for additional layers.
  8. Replace rose syrup in milk with a flavored essence i.e. pistachio, mango, strawberry, etc. and food color.
  9. Adjust ice cream flavor accordingly.
