Ingredients
  • 1 cup Rice (cooked)
  • ¾ tsp Ground cumin
  • ¼ tsp Salt (or to taste)
  • ¼ tsp Sugar
  • ½ tsp Green chilies (or to taste, crushed)
  • 1 tsp Ginger (crushed)
  • Mint (chopped, for garnish)
  • Green coriander (chopped, for garnish)
Tempering
Ingredients
  • 2 tsps Ghee
  • 1 tsp Oil
  • ½ tsp Mustard seeds
  • ½ tsp Cumin seeds
  • ⅛ tsp Asafoetida (hing)
  • ⅛ tsp Turmeric
Instructions
  1. In a saucepan, heat ghee and oil on medium heat, add mustard and cumin.
  2. When crackling add asafoetida and turmeric then add the rice and the remaining ingredients.
  3. Mix and heat thoroughly. Garnish.
Variation
  1. After the tempering you can add vegetables of your choice, such as boiled corn kernels, peas, finely chopped onion, chopped tomatoes. Let cook, meanwhile incorporate the spices in the rice and add to the vegetables. Garnish.
