Ingredients
  • Corn tortilla chips (not thin style)
  • 1 can Black beans (rinsed)
  • Salsa (as needed)
  • Onions (finely chopped)
  • Tomatoes (finely chopped)
  • Corn kernels (boiled)
  • Olives (sliced)
  • Pickled jalapenos ( sliced)
  • Cheese (grated cheddar, pepper jack or monterey jack)
  • Sour cream (for topping)
  • Guacamole (for topping)
  • Green onions (sliced, for garnish)
Instructions
  1. Preheat oven to 350°F.
  2. Spread out some chips in a rimmed baking tray.
  3. Spread beans all over, drizzle salsa on top then sprinkle some finely chopped vegetables.
  4. Top with some grated cheese.
  5. Bake for about 10 minutes or until the cheese is melted.
  6. Serve topped with green onions, sour cream and guacamole.
  7. Note: this recipe can be microwaved on a plate.
