Green Enchilada Sauce
Ingredients
- 1 lb Tomatillos (peeled, washed & halved)
- 1 Onion (medium, peeled & quartered)
- 1 Serrano or jalapeño pepper (halved lengthwise)
- 4 cloves Garlic (unpeeled)
- 1 tbsp Olive oil
- 2 tsps Cumin seeds
- ½ tsp Salt
- ½ tsp Ground black pepper
- 2 tsps Lime juice
- 1 cup Green corainder (chopped)
Instructions
- Preheat broiler on medium.
- Arrange tomatillos, onions, pepper and garlic on a baking tray. Drizzle oil and broil until slightly charred.
- Remove skin from the garlic and pepper and place in a food processor along with the remaining ingredients and blend until smooth. Store.
