Quesadilla
Ingredients
- Flour tortillas
- Onions (finely chopped)
- Green peppers (finely chopped)
- Tomatoes (finely chopped)
- Boiled corn
- Red or green taco sauce
- Salt and pepper to taste
- Grated cheese
- Sliced pickled jalapeños
- Oil (for cooking)
Instructions
- In a frypan, sauté vegetables on medium heat for a couple of minutes.
- Add salt and pepper, stir and remove from heat, empty into a dish and let cool.
- Heat and grease a frypan with oil on low heat.
- Place a tortilla in the pan, spread taco sauce on the entire tortilla.
- On half the tortilla spread some sautéed vegetables and jalapenos.
- Sprinkle cheese and fold tortilla over the vegetables.
- Let crisp then gently flip to crisp and melt cheese on the other side.
Variations
- Cheese only.
- Seasoned black beans and cheese.
- Beans and vegetables of your choice with cheese.
- Replace beans with cooked and seasoned meat.
