Ingredients
  • Flour tortillas
  • Onions (finely chopped)
  • Green peppers (finely chopped)
  • Tomatoes (finely chopped)
  • Boiled corn
  • Red or green taco sauce
  • Salt and pepper to taste
  • Grated cheese
  • Sliced pickled jalapeños
  • Oil (for cooking)
Instructions
  1. In a frypan, sauté vegetables on medium heat for a couple of minutes.
  2. Add salt and pepper, stir and remove from heat, empty into a dish and let cool.
  3. Heat and grease a frypan with oil on low heat.
  4. Place a tortilla in the pan, spread taco sauce on the entire tortilla.
  5. On half the tortilla spread some sautéed vegetables and jalapenos.
  6. Sprinkle cheese and fold tortilla over the vegetables.
  7. Let crisp then gently flip to crisp and melt cheese on the other side.
Variations
  1. Cheese only.
  2. Seasoned black beans and cheese.
  3. Beans and vegetables of your choice with cheese.
  4. Replace beans with cooked and seasoned meat.
