Ingredients
  • 12 Jumbo shells
  • 2 tbsps Olive oil
  • ½ cup Onions (finely chopped)
  • 2 tsps Garlic (crushed)
  • ⅓ cup Bell peppers (mixed colors, finely chopped)
  • ¼ cup Broccoli florets (cut small)
  • 1 tsp Dried basil
  • ½ tsp Salt (or to taste)
  • ¼ tsp Ground black pepper
  • 15 oz Ricotta cheese
  • 2 cups Marinara sauce
  • 1 cup Mozzarella cheese (grated)
Instructions
  1. Cook jumbo shells according to package directions.
  2. In a skillet, heat oil on medium heat, add onions and garlic.
  3. Sauté for one minute and add the vegetables and the seasonings, cook for 2 minutes.
  4. Set aside to cool slightly then combine the ricotta cheese.
  5. Stuff the shells equally with the cheese stuffing.
  6. Preheat the oven 350°F.
  7. In a large 11 x 9 inch greased baking dish, spread half the marinara sauce, arrange the shells on top.
  8. Pour remaining sauce all over the shells.
  9. Sprinkle mozzarella cheese and cover with foil and bake for 30 minutes.
  10. Serve with garlic bread.
