Ingredients
  • 2 cups Cooked preferred pasta (4 oz)
  • 2 tbsps Olive oil
  • 2 tsps Cumin seeds
  • 1 tsp Garlic (crushed)
  • ½ cup Zucchini (finely cubed )
  • ½ cup Onions (finely cubed)
  • ½ cup Carrots (finely cubed)
  • ½ cup Bell peppers (mixed colors finely cubed)
  • green chilies (chopped, to taste, optional)
  • 1 tsp Salt (or to taste)
  • ½ tsp Ground black pepper (or to taste)
  • ¼ tsp Crushed red pepper (or to taste)
  • ½ tsp Dried oregano
  • ½ tsp Dried basil
  • ½ tsp Dried parsley
  • ½ tsp Dried Italian seasoning
Instructions
  1. Heat oil in a saucepan on medium high heat.
  2. Add cumin, as it crackles, add garlic.
  3. Sauté for a few seconds, add vegetables and cook for a couple of minutes.
  4. Reduce heat to low, combine the pasta and the seasonings.
  5. Mix thoroughly until heated through.
  6. Vegetables should still be a little crunchy.
Variation
  1. If gravy is desired add 1 cup crushed tomatoes.
  2. Cook for a couple of minutes before adding the vegetables.
  3. Adjust the seasonings to taste.
