Penne / Rainbow Pasta

Ingredients
- 2 cups Cooked preferred pasta (4 oz)
- 2 tbsps Olive oil
- 2 tsps Cumin seeds
- 1 tsp Garlic (crushed)
- ½ cup Zucchini (finely cubed )
- ½ cup Onions (finely cubed)
- ½ cup Carrots (finely cubed)
- ½ cup Bell peppers (mixed colors finely cubed)
- green chilies (chopped, to taste, optional)
- 1 tsp Salt (or to taste)
- ½ tsp Ground black pepper (or to taste)
- ¼ tsp Crushed red pepper (or to taste)
- ½ tsp Dried oregano
- ½ tsp Dried basil
- ½ tsp Dried parsley
- ½ tsp Dried Italian seasoning
Instructions
- Heat oil in a saucepan on medium high heat.
- Add cumin, as it crackles, add garlic.
- Sauté for a few seconds, add vegetables and cook for a couple of minutes.
- Reduce heat to low, combine the pasta and the seasonings.
- Mix thoroughly until heated through.
- Vegetables should still be a little crunchy.
Variation
- If gravy is desired add 1 cup crushed tomatoes.
- Cook for a couple of minutes before adding the vegetables.
- Adjust the seasonings to taste.
