Chicken Curry (1)
Ingredients
- 1 lb Boneless, skinless chicken (cubed)
- 4 tbsps Oil
- 1½ cup Onion (finely chopped)
- 4 tsps Garlic (crushed)
- 4 tsps Ginger (crushed)
- 1 cup Tomatoes (finely chopped)
- 1½ tsp Salt (or to taste)
- 1 cup Water
- 2 tsps Ground coriander/cumin mix
- ½ tsp Turmeric
- 1¼ tsp Red chili powder (or to taste)
- 3 tsps Chicken masala (if not available, add ½ tsp more garam masala)
- ½ tsp Kashmiri chili powder
- ½ tsp Garam masala
- ⅓ cup Green coriander (finely chopped for garnish)
Instructions
- In a deep saucepan, heat oil on medium heat.
- Add the onions and sauté.
- When onions are browned, add tomatoes, salt and ¼ cup of water.
- Mix and cover.
- Let cook until tomatoes are soft and mushy and the oil begins to separate.
- Incorporate ginger, garlic, ground coriander, turmeric, red chili powder & chicken masala.
- Add chicken and mix well.
- Lower heat, cover and cook for 5 minutes.
- Add ¾ cup of water and the remaining ingredients.
- Mix, cover and cook for another 15 minutes.
- Garnish with green coriander.
