Ingredients
  • 1 lb Boneless, skinless chicken (cubed)
  • 4 tbsps Oil
  • 1½ cup Onion (finely chopped)
  • 4 tsps Garlic (crushed)
  • 4 tsps Ginger (crushed)
  • 1 cup Tomatoes (finely chopped)
  • 1½ tsp Salt (or to taste)
  • 1 cup Water
  • 2 tsps Ground coriander/cumin mix
  • ½ tsp Turmeric
  • 1¼ tsp Red chili powder (or to taste)
  • 3 tsps Chicken masala (if not available, add ½ tsp more garam masala)
  • ½ tsp Kashmiri chili powder
  • ½ tsp Garam masala
  • ⅓ cup Green coriander (finely chopped for garnish)
Instructions
  1. In a deep saucepan, heat oil on medium heat.
  2. Add the onions and sauté.
  3. When onions are browned, add tomatoes, salt and ¼ cup of water.
  4. Mix and cover.
  5. Let cook until tomatoes are soft and mushy and the oil begins to separate.
  6. Incorporate ginger, garlic, ground coriander, turmeric, red chili powder & chicken masala.
  7. Add chicken and mix well.
  8. Lower heat, cover and cook for 5 minutes.
  9. Add ¾ cup of water and the remaining ingredients.
  10. Mix, cover and cook for another 15 minutes.
  11. Garnish with green coriander.
