Magaj
Ingredients
- 2 lbs Chana dal (coarse ground like sugar)
- 2 cups Melted ghee
- 5 tbsps Milk
- 7 cups Powdered sugar
- 4 tsps Ground cardamom
- Cardamom seeds (for garnish)
- Raw almonds (sliced, for garnish)
- Unsalted pistachios (sliced, for garnish)
Instructions
- Using ghee, grease a 10 inch round or square deep tray.
- In a large bowl, mix milk and 4 tbsp ghee with the flour. Rub between hands to make moist granules.
- Place in a large hole sieve and sift to get evenly formed granules.
- Heat remaining ghee in a heavy bottom saucepan, add granules and sauté on low heat stirring continuously.
- As you stir, the mixture will become frothy and lightweight and will begin to change color and give a nice aroma.
- When it starts to turn reddish, immediately remove from heat and empty into a dish to cool.
- Continue stirring in the dish.
- When lukewarm, add the sugar and cardamom, stir vigorously.
- Empty into the greased tray, tap the tray a few times to even out the dough.
- Sprinkle the garnish evenly and press gently with a spatula.
- Cool completely until hard, cut into diamond shapes.
- Gently glide and lift the pieces and store.

- ⅓ cup Ground almonds
- ⅓ cup Ground unsalted pistachios
- 1 tbsp Ground ginger
- 1 tsp Fenugreek
