Garam Masala
Ingredients
- 200 g Black pepper (whole)
- 200 g Cinnamon
- 200 g Badia (star anise)
- 200 g Khus-khus (poppy seeds)
- 200 g Elcho (black cardamom)
- 200 g Shah jeera (caraway)
- 200 g White pepper (whole)
- 200 g Cloves
- 200 g Coriander (whole)
- 100 g Cardamom seeds
- 100 g Sunth (dry ginger)
- 100 g Fennel seeds
- 100 g Bay leaves
- 50 g Javantri (mace)
- 50 g Dagad phool (black stone flower)
- 50 g Nag kesar
- 50 g Cumin seeds
- 6 whole Nutmegs (broken into pieces)
Instructions
- Thoroughly dry all ingredients in the sun or dry roast in a pan.
- Cool and grind to a powder.
- Store for later use.
